Is there a way or product you sell to calculate commission per item sold? Some items I plan on selling have varying profit margins.

If you are using the WooCommerce integration that comes with the Affiliates Pro integration pack for WooCommerce, it allows you to enable product rates. If you have it already installed, you can enable it going to Affiliates > WooCommerce Integration under Product rates.
